If you’re searching for a showstopping appetizer to brighten your holiday table or add warmth to a fireside gathering, look no further than this Cranberry Cider Cheese Dip. What sets this dip apart from the ordinary? The vibrant, tangy kick of Portland Cider Co’s Cranberry Mule Cider—a local specialty bursting with fresh cranberry flavor and subtle ginger notes.
Ingredients
Cranberry Cider Reduction:
1 cup fresh or frozen cranberries
1/2 cup Portland Cider Co Cranberry Mule Cider (alcoholic)
1 tbsp brown sugar
1 tsp grated fresh ginger
1 tbsp lime juice
Cheese Dip Base:
8 oz cream cheese, softened
1 cup shredded sharp white cheddar (plus 1/4 cup more for topping)
1/2 cup sour cream
Salt and pepper to taste
Optional Garnishes:
Lime zest
Fresh thyme
Step-by-Step Instructions
Make the Cranberry Cider Reduction
In a small saucepan, combine cranberries, Portland Cider Co Cranberry Mule Cider, brown sugar, ginger, and lime juice. Simmer gently over medium heat until the cranberries burst and the mixture thickens—about 10–15 minutes. Lightly mash for a chunky texture, and let cool. Most of the alcohol will evaporate, leaving a concentrated, tart-sweet reduction.
Prepare the Cheese Base
In a medium bowl, mix together the softened cream cheese, shredded cheddar, sour cream, salt, and pepper until smooth and creamy. Fold in half of the cranberry cider reduction to swirl in that signature flavor.
Bake the Dip
Spread the cheese mixture into a small baking dish. Top with the remaining cheddar, then bake at 375°F (190°C) for about 25 minutes, until the dip is golden and bubbling.
Finish and Serve
Spoon the rest of the cranberry cider reduction over the hot dip and garnish with lime zest or thyme sprigs. Serve immediately, with toasted French bread, apple slices, or crisp crackers for dipping.
Pair this dip with a chilled glass of Cranberry Mule Cider to echo its flavors and fully enjoy Portland’s craft cider tradition. Cheers!
